The Champagne Fizz is essentially a French 75 by another name — gin, lemon juice, and sugar shaken and topped with champagne instead of the usual soda water. Substituting champagne for club soda was a natural evolution of the fizz family in upscale bars, and the result is one of the most celebratory drinks in the cocktail canon. The champagne’s yeastiness and fine bubbles interact differently than soda, creating a more complex and refined effervescence.
