The Dry Negroni replaces the traditional sweet vermouth with dry vermouth, creating a leaner, more bitter variation of one of Italy’s most iconic aperitivos. Count Camillo Negroni is said to have invented the original in 1919 at Caffè Casoni in Florence by asking his bartender to strengthen his Americano with gin instead of soda. This dry variation pushes the cocktail further toward the bitter end of the spectrum — the dry vermouth amplifies the herbal bite of Campari and the botanicals of the gin without the sweet vermouth’s cushioning effect. Stirred over ice in an old-fashioned glass with a lemon twist.
