Apple Blow Fizz

The Apple Blow Fizz is a pre-Prohibition fizz variation that swaps gin for apple brandy, adding egg white for a silky, frothy head. Apple brandy — particularly applejack from the American Northeast — was one of the most widely consumed spirits in early American cocktail culture. The egg white transforms the texture, creating a meringue-like foam that sits on top of the fizzy soda water, while the lemon juice and sugar keep everything bright and balanced.

Ingredients

  • 2 oz apple brandy
  • juice of 1/2 lemons
  • 1 tsp powdered sugar
  • 1 egg white
  • carbonated water
  • ice

Instructions

  1. Shake all ingredients (except carbonated water) with ice and strain into a highball glass over two ice cubes.
  2. Fill with carbonated water, stir, and serve.
