Sea Fizz

The Sea Fizz is a rare absinthe-based fizz that dates to the early cocktail era. Deva absinthe, lemon juice, sugar, and egg white are shaken and topped with soda water. The egg white creates a frothy, meringue-like head, while the absinthe’s intense anise and herbal character drives the flavor. Absinthe fizzes were popular before Prohibition, when absinthe was legal and widely available in American bars. This one captures that era’s boldness — aromatic, complex, and not for casual sipping.

This tart recipe combines 1 1/2 oz Deva® absinthe, 1 tbsp lemon juice and 1 tsp sugar into a Medium-to-make drink.

Ingredients

  • 1 1/2 oz Deva® absinthe
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • 1 egg white
  • soda water

Instructions

Shake with ice and strain into a highball glass and fill with seltzer.
