Icy Ice

Four citrus juices — lime, lemon, orange, and cranberry — combined with a pinch of salt over ice. The salt enhances the citrus flavors and reduces bitterness, a trick borrowed from margarita-making. It’s bracingly tart and unapologetically sour.

Ingredients

  • 1 oz lime juice
  • 1 oz lemon juice
  • 1 oz orange juice
  • 1 oz cranberry juice
  • 1 pinch salt
  • 1 scoop lime ice cream
  • 1 pinch lemon zest
  • Pepsi® cola

Instructions

  1. Stir the juices together in a freezable container and freeze until ice.
  2. Crush the ice finely with the lemon zest, and mix salt into the crushed ice.
  3. Pour the Pepsi into a highball glass, and quickly add the ice cream and cover with the crushed ice to prevent it flowing out.
  4. Serve.
