The John Collins is the original Collins cocktail — bourbon, lemon juice, sugar, and club soda, garnished with a cherry. It predates the more famous Tom Collins (which uses gin) and was named after a head waiter at Limmer’s Hotel in London in the early 1800s. The bourbon’s vanilla and oak notes pair beautifully with fresh lemon and effervescent soda. It’s one of the simplest and most satisfying long drinks in the classic cocktail repertoire.
