In and Out Martini

The In and Out Martini gets its name from the technique: vermouth goes in the glass, swirls around, and then gets dumped out — leaving only a whisper of vermouth coating the glass before the gin is strained in. It’s the bartender’s method for making an extremely dry Martini without abandoning vermouth entirely. The result is essentially straight gin at Martini temperature, with just the faintest ghost of vermouth on the palate.

Ingredients

  • 1 splash dry vermouth
  • 4 fingers gin

Instructions

  1. Fill a cocktail glass with ice, and add a splash of dry vermouth.
  2. While glass chills, add 4 fingers of gin in a mixer of ice.
  3. Throw away ice/vermouth in cocktail glass then strain in gin.

Serve In
