Ojen Cocktail

A Mardi Gras tradition dating to the 1800s. Ojén — a sweet, anise-flavored Spanish liqueur — shaken with Peychaud's bitters, sugar, and water. This is the drink used to toast the King of Carnival on Mardi Gras Day. The anise flavor is bold but the sugar and bitters create balance. If you can find Ojén (the Sazerac Company revived it in 2016), this is New Orleans history in a glass.
