Lassi Khara

Lassi Khara is the savory version of the traditional Indian yoghurt drink — yoghurt thinned with cold water and seasoned with salt, asafoetida (hing), and sometimes cumin. The asafoetida adds a distinctive umami-garlic note that transforms the lassi from a simple yoghurt drink into something more complex. Best served alongside spicy curries.

Ingredients

  • 1 cup yoghurt
  • 2 cups cold water
  • 1 tsp salt
  • 1 pinch asafoetida

Instructions

  1. Blend (frappe) in a blender until frothy.
  2. Add torn curry leaves and serve cold.
