Pina Colada Punch

A punch-bowl version of the Piña Colada — pineapple juice, coconut cream, coconut syrup, and cinnamon combined with sparkling pineapple soda. The cinnamon is an unexpected addition that adds warm spice to the tropical base. Makes a large batch for parties and can easily be spiked with rum for adults-only service.

Ingredients

  • 46 oz chilled pineapple juice
  • 15 oz coconut cream
  • 1 tbsp coconut syrup
  • 1 tbsp cinnamon
  • 2 liters chilled pineapple soda
  • 1 pint vanilla ice cream

Instructions

  1. Blend pineapple juice, coconut syrup, coconut cream and cinnamon in a blender until creamy.
  2. Place in refridgerator if desired or continue immediately to next step.
  3. Add mixture from previous step to a punch bowl.
  4. Add ice-cream and allow to mostly dissolve.
  5. Add pineapple soda, an ice ring, and thin orange slices.
