Lemon Flip

There's something satisfying about a well-made Lemon Flip. This zesty version uses 1 egg yolk, sugar syrup, and lemon juice for a result that's greater than the sum of its parts.

Ingredients

  • 1 egg yolk
  • 2 tsp sugar syrup
  • 4 cl lemon juice

Instructions

  1. Add egg yolk, sugar syrup and lemon juice over several ice cubes in a shaker.
  2. Shake very well and strain into a highball glass.
  3. Add a straw, and serve.
