Leche de Monja

The Leche de Monja works as well on a weeknight as it does at a party — bright and citrus-forward flavors and done in under 5 minutes.

Ingredients

  • eggs
  • lime juice
  • sugar
  • pisco brandy

Instructions

  1. Place whole eggs, in shell, (organic would be preferable) in a jar.
  2. Cover with lemon/lime juice.
  3. Seal the jar and refrigerate.
  4. Leave the eggs to marinate for 2-3 weeks.
  5. The shells should become soft.
  6. Place the eggs and juice in a blender and blend until smooth.
  7. Strain to remove egg membranes.
  8. Add sugar and pisco to taste.
