Ponche de Pina

A tempting recipe for Ponche de Pina made with pineapples, water, cinnamon, cloves, allspice, sugar, coconut milk and light rum.

Ingredients:
3 pineapples
3 cups water
3 cinnamon sticks
2 tsp cloves
2 tsp allspice
3/4 cup sugar
1 cup coconut milk
1 qt light rum

Method:
1. Peel pineapples, chop and shread. Add water and let stand overnight.

2. Add pineapple to a large saucepan with spices, sugar, and coconut milk. Boil for 5 minutes, and strain into a large pitcher. Add rum and serve hot.

Serve in:
Pitcher
