Virgin Raspberry Daiquiri

Raspberry puree, pineapple juice, lemon juice, sugar, and raspberry syrup shaken with ice for a vibrant, tangy frozen-style daiquiri without the rum. The double raspberry — fresh puree plus syrup — gives it an intense berry flavor. Served in a cocktail glass, it looks and drinks like the real thing.

Ingredients

  • 3 oz raspberry puree
  • 2 oz pineapple juice
  • 1/2 oz lemon juice
  • 1 tsp caster sugar
  • 1/2 oz raspberry syrup

Instructions

  1. Blend briefly with half a glassful of crushed ice in a wine goblet.
  2. Garnish with raspberries, and serve.
